Ingredients
- 8 ounces rotini pasta (or any pasta you like)
- 1 pint grape tomatoes, halved
- 1 English cucumber, sliced
- 1/2 red onion, thinly sliced
- 1 tablespoon fresh dill, chopped
- 1 tablespoon fresh parsley, chopped
- 1 tablespoon fresh basil, chopped
- 1/4 cup sour cream
- 1/4 cup mayonnaise
- 1 tablespoon red wine vinegar
- 1 teaspoon sugar
- 1/4 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Bring a pot of salted water to a boil. Add the pasta and cook according to package directions. Drain and rinse the pasta, then let it cool for 3-5 minutes.
- While the pasta cools, halve the tomatoes, slice the cucumber and onion, and chop the dill, parsley, and basil. Place all the veggies and herbs into a large bowl.
- In a small bowl or mason jar, combine the sour cream, mayonnaise, red wine vinegar, sugar, garlic powder, salt, and pepper. Whisk or shake to combine.
- Add the cooled pasta to the bowl of vegetables and herbs. Pour the dressing over and toss until well combined. Taste and adjust seasoning as needed.
