Full Recipe:

Ingredients:

  • 1 lb ground beef
  • 12 oz rotini pasta, cooked and drained
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and black pepper, to taste
  • 1 cup cherry tomatoes, halved
  • 1/2 cup dill pickles, chopped
  • 2 cups romaine lettuce, shredded
  • 1 cup cheddar cheese, shredded

For the Dressing:

  • 1/2 cup mayonnaise
  • 1/4 cup ketchup
  • 1/4 teaspoon salt

Directions:

  1. Heat olive oil in a skillet over medium heat. Add onion and garlic, and sauté until fragrant, about 2-3 minutes.
  2. Add ground beef to the skillet, breaking it apart with a spatula. Cook until browned and cooked through. Season with salt and pepper. Remove from heat and let cool slightly.
  3. In a large mixing bowl, combine the cooked pasta, ground beef mixture, cherry tomatoes, dill pickles, romaine lettuce, and cheddar cheese.
  4. In a small bowl, whisk together mayonnaise, ketchup, and salt to create the dressing.
  5. Pour the dressing over the pasta salad ingredients and toss until well coated.
  6. Refrigerate for at least 30 minutes to allow flavors to meld. Serve chilled and enjoy!
