- Pie Dough:
- 2 1/2 cups all-purpose flour
- 1 tablespoon granulated sugar
- 1 teaspoon kosher salt
- 2 sticks (8oz) unsalted butter, diced and very cold
- 6–9 tablespoons ice water
- 1 egg for egg wash
- 1/4 cup turbinado sugar for sprinkling
- Bourbon Apple Filling:
- 2 large honey crisp apples, peeled and diced small
- 3 tablespoons salted butter
- 2 tablespoons bourbon whiskey
- 1 teaspoon vanilla bean paste
- 1/2 teaspoon ground cinnamon
- 2/3 cup brown sugar
- Roasted Blackberry Filling:
- 18 oz fresh blackberries
- 1/3 cup granulated sugar
- 1 teaspoon vanilla extract
Instructions
- Make the crust: In a stand mixer with the paddle attachment, combine flour, sugar, and salt. Add cold butter and mix on low until the texture is coarse with pea-sized butter pieces. Gradually add ice water, mixing until dough forms. Divide in half, wrap in plastic, and chill for at least one hour.
- Prepare the apple filling: In a pan, brown butter, add apples, then bourbon. Add vanilla, cinnamon, and brown sugar. Simmer until syrupy, about 5-7 minutes. Cool.
- Prepare the blackberry filling: Roast blackberries at 400°F for 30 minutes. Simmer roasted berries with sugar and vanilla until thick, about 10 minutes. Cool.
- Roll and cut dough: Roll dough to 1/8 inch thick, cut out pumpkin shapes. Chill cutouts, then carve jack-o-lantern faces on half.
- Assemble pies: Place filling on non-face pumpkins, brush edges with egg, top with face pumpkins, seal with a fork.
- Bake: Brush tops with egg, sprinkle with sugar, and bake at 375°F for 25 minutes. Cool before serving.
