  • 4 boneless, skinless chicken breasts
  • Salt, to taste
  • Pepper, to taste
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 16 slices Swiss cheese
  • 1/2 lb ham, thinly sliced
  • Peanut oil or vegetable oil, for frying
  • 1 cup all-purpose flour
  • 4 eggs, beaten
  • 2 cups panko bread crumbs

For the Creamy Dijon Sauce:

  • 3 tablespoons butter
  • 2 cloves garlic, minced
  • 3 tablespoons all-purpose flour
  • 2 cups milk
  • 1/4 cup Dijon mustard
  • 1 cup shredded Parmesan cheese
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Preheat a deep pan with 2 inches of oil to 325°F (170°C).
  2. Pound chicken breasts to an even ½-inch thickness between two sheets of plastic wrap. Season both sides with salt, pepper, garlic powder, and onion powder.
  3. Lay two slices of Swiss cheese and two slices of ham on each chicken breast. Roll tightly and wrap in plastic wrap. Chill for 30 minutes.
  4. Set up a breading station with flour, beaten eggs, and panko breadcrumbs. Dredge each chicken roll in flour, dip in eggs, then coat with breadcrumbs.
  5. Fry each roll for 5 minutes per side until golden brown. If necessary, transfer to a 325°F oven to finish cooking until internal temperature reaches 165°F.
  6. For the sauce, melt butter in a saucepan over medium heat, sauté garlic, whisk in flour, and cook for 1 minute. Slowly add milk while whisking, then simmer until thickened. Add Dijon mustard, Parmesan cheese, salt, and pepper. Stir until smooth.
  7. Slice the cooked chicken rolls and drizzle with warm Dijon sauce before serving.
