Ingredients
- 6 oz (170g) boneless, skinless chicken breast, cut into thin slices
- 2 tablespoons cooking oil, divided
- 8 oz (230g) bok choy, sliced into pieces
- 1-inch ginger, peeled and sliced
Marinade:
- 1/2 tablespoon soy sauce
- 1/2 tablespoon cornstarch
Sauce:
- 1/2 tablespoon oyster sauce
- 2 tablespoons water
- 1/4 teaspoon sesame oil
- 3 dashes white pepper
- 1 teaspoon cooking wine
- 1/2 teaspoon sugar
Instructions
- Marinate the chicken with soy sauce and cornstarch for 10 minutes. In a small bowl, combine all the sauce ingredients and stir to mix well.
- Heat 1/2 tablespoon of oil in a wok over medium heat until hot. Add the marinated chicken and stir-fry until the chicken turns white on the surface. Remove from the wok and set aside.
- Add the remaining oil to the wok and heat. Sauté the ginger until aromatic, then add the chicken back into the wok and stir well.
- Add the bok choy and mix with the chicken, followed by pouring in the sauce. Continue to stir-fry until the bok choy is just cooked but still crisp.
- Serve immediately with steamed rice.
