Ingredients

  • 6 oz (170g) boneless, skinless chicken breast, cut into thin slices
  • 2 tablespoons cooking oil, divided
  • 8 oz (230g) bok choy, sliced into pieces
  • 1-inch ginger, peeled and sliced

Marinade:

  • 1/2 tablespoon soy sauce
  • 1/2 tablespoon cornstarch

Sauce:

  • 1/2 tablespoon oyster sauce
  • 2 tablespoons water
  • 1/4 teaspoon sesame oil
  • 3 dashes white pepper
  • 1 teaspoon cooking wine
  • 1/2 teaspoon sugar

Instructions

  1. Marinate the chicken with soy sauce and cornstarch for 10 minutes. In a small bowl, combine all the sauce ingredients and stir to mix well.
  2. Heat 1/2 tablespoon of oil in a wok over medium heat until hot. Add the marinated chicken and stir-fry until the chicken turns white on the surface. Remove from the wok and set aside.
  3. Add the remaining oil to the wok and heat. Sauté the ginger until aromatic, then add the chicken back into the wok and stir well.
  4. Add the bok choy and mix with the chicken, followed by pouring in the sauce. Continue to stir-fry until the bok choy is just cooked but still crisp.
  5. Serve immediately with steamed rice.
